When I'm in this situation I usually stick to the simple tried and true. Bring some lemons or a small bottle of lemon juice, some salt and pepper, some shortening, and a ziploc bag of flour. Salt and pepper the fish, then coat in flour and fry in shortening. Add some lemon juice to the pan right at the end.

If you prefer not to fry it for health reasons, bring along some foil. Put a couple of fillets in a foil pouch with salt, pepper, lemon juice, garlic, and parsley. Poke a couple of small holes in the pouch to let out some of the steam (you want some to cook it) and throw them on the fringe of the fire. Cook for about 15-20 minutes depending on the temp.
