Jungle Cock substitute?

I decided today to let my chicken flock go free ranging. In the fuller light of day I noticed that my Belgian Bearded d'Uccle (Mille Fleur) were maturing quite nicely, with fantastic coloration. Are there other members familiar with this breed and if so, do you believe that their plumage would make a good substitute for the jungle cock so common in Atlantic salmon/Spey patterns? For a reference to their plumage pattern try www.mcmurryhatchery.com, bantams.

Here's another: http://www.shagbarkbantams.com/milles.htm
