This omelet / souffle treat is one of my favorites:
fresh or canned crabmeat, quantity to taste
eggs
half and half or milk
chopped onion
optional asparagus tips chopped
Old Bay seasoning
mild shredded cheese (monterey, provolone, mild cheddar, etc)
extra light olive oil
grated parmesan cheese
parsley
heat olive oil in omelet pan
add optional asparagus tips (chopped) to soften
add onions, caramelize slightly
add crab meat just to heat lightly,
season with old bay to taste, a little garlic salt complements it well too
Add beaten eggs with a little cream or milk to lighten
push crabmeat to one side and add eggs to pan
push meat over egg to spread evenly over the egg
sprinkle grated cheese on top
put pan under the broiler at medium broil temp until it rises
remove when it is cooked but still very fluffy
garnish with parsley and grated parmesan
