Grilled Mojito Scallops and Shrimp

Improved these over the weekend..well for my wife's first Mother's Day...they turned out great.

Marinade a scallops and shrimp in a bunch of finely diced mint and cilantro (some may call this a chiffanade :rolleyes: ), a clove of garlic, 10 or so key limes juiced, kosher salt, fresh ground pepper, and some olive oil. Marinade to taste, I love the taste of the seafood, so I go light...30 mins for me or so.

Skewer and grill...shrimp and scallops on their own skewers to accomodate the slightly different cooking times.

I served them over a bed of greens with a tomatillo salsa dressing, but they'll shine alone as an app or as a main course.

Oh, and the requisite Mojito of course :)
