The epoxy would just help keep the eyes on a little longer. It's not too hard to use once you get the hang of it, especially if you just use a very small amount of 5 minute epoxy, but I understand about not wanting to mess up the fly -- I've gooped up a few in my time
As for the rabbit strips, you can try leaving them as they are and see how the fly works. You can always lash them down later if they keep wrapping around the hook shank when you cast.
I didn't go into detail about the weedguard or mono loop because I didn't want to confuse you. They are not difficult to do but drawings or photos explain better than words. I'll see if I can find some links to tying instructions that show how to do it.
