Yes they do. And they are good to eat, here's how. Take two bonefish put them in the fridge over night. Next day put one on a cutting board, cut off the tail take a rolling pin or coke bottle and roll it down the sides of the fish. What you do is squeeze out all the meat like toothpaste. Make fish cakes out of it. It tastes just like toothpaste but better. Not sure they have bone fish in Costa Rica but they do have snook and tarpon. If you need a bone fish and some excitment hire a non resident guide down in Cancun. I bet you will always will remember the violence that will happen this year in sunny Mexico.
