not much trout where i live but here is my favorite meal
rainbow or ruby trout fillets pan fried with olive oil and butter
fried up mushrooms in same pan with same olive oil and butter
slice lemon wedges . salt /pepper trout
big slab of french bread
vanilla coke to wash it all down with

Have you tried cooking the trout with the head left on instead of fillet? It seems to help keep more moisture in the fish. For those squemish about eyes looking up from the plate just behead them after cooking.
ok got me a nice rainbow: farmed raised im sure at the store with head , going to pan fry that dude in olive oil with mushrooms again oh my mouth is watering thinking about it :hihi: might throw in some spices of some sort maybe some cajun will keep u posted on this wonderful fish.
