true albacore kabobs
If you can find it, get true albacore steaks (fresh)
Cut orange, yellow and red peppers and onion and marinate in a light oil-based salad dressing (Italian, etc) or oil and spices.
Cut steaks into kabob sized cubes. Pat with olive oil / season with Prudhomme's blackened redfish magic lighter than you would for blackened fish.
Skewer alternately with veggies and cook on grill until just barely cooked thru.
Suggest fresh native corn and new potato salad or a bed of pilaf.
