... that anyone has used to tangle with a bluefish or striper? Just want to get some idea.

If you are fishing with 20# tippet, a 0ne weight should be OK. Just point the tip at the fish and hand line her in.
Seriously, HOW you fight the fish is more important than what line weight your rod is rated for. To a point, you should use the line weight that is most appropriate for the fly and presentation you have in mind. Most fish could be landed on a 6 wt., but it would suck casting most flys in most conditions with a 6 wt.
Eight weights and nine weights seem to be the most popular line weights, with ten weights becoming more popular as people realize that a heavier line can make life easier in a breeze with a big fly.
To answer your question, I have caught small school fish on a 4 weight.
