Hello all...I am finally getting around to posting the appetizer recipe from the clave. ENJOY....

SUN DRIED TOMATO MOUSSE


1 CUP (1 STICK) BUTTER, SOFTENED
16 OUNCES CREAM CHEESE, SOFTENED
3/4 CUP OIL PACKED SUN-DRIED TOMATOES, DRAINED AND CHOPPED
2 CLOVES GARLIC, CHOPPED FINELY
1 6 OUNCE CAN ITALIAN TOMATO PASTE
5 TABLESPOONS FRESH CHOPPED BASIL
2 TEASPOONS SALT
1 TEASPOON PEPPER
1-2 BOXES OF FAVORITE CHIPS FOR DIPPING

BEAT THE BUTTER IN A MIXING BOWL UNTIL VERY SMOOTH BUT NOT FLUFFY

ADD THE CREAM CHEESE TO THE BUTTER AND MIX UNTIL JUST BLENDED, DO NOT OVERMIX.

STIR IN THE SUN DRIED TOMATOES, GARLIC, TOMATO PASTE, BASIL, SALT AND PEPPER. DO NOT OVERMIX....

SPOON THE MIXTURE INTO A PLASTIC MOLD ABOUT 6 INCHES ROUND.

CHILLING OVERNIGHT BRINGS OUT THE BEST OF FLAVORS.

WHEN READY TO SERVE, PLACE THE LOWER HALF OF THE MOLD IN HOT WATER FOR APPROX. 30 SECONDS TO RELEASE THE MOUSSE. INVERT THE MOUSSE ONTO SERVING PLATE.. THE DIP IS BEST SERVED AT ROOM TEMPERATURE.
